Advertising, Photography, Public Relations (my university requires a design layout course for PR majors), Art…there are many options. Your best bet to get a job at a magazine is to minor or double major in english or communcation.

For the Art Department, focus on Graphic Arts and Fine Arts courses. Design and layout of course. Typography. Make sure you are very skilled in Photoshop, Illustrator and Quark (or InDesign). Learn as much as you can about the production environment. Study up on inks, paper and printing processes.
You probably will not be taking the photos, or writing the text. Unless you are the Creative Director, in magazine layouts, you will not be making crucial design decisions.
I really think the best education comes over time, in the workplace. Your best bet is to master the industry-standard software. That will get your foot in the door.
You can go to Monster.com and check out requirements for Graphic Designer jobs (for instance) to get a better idea of what employers in your area expect of applicants.
Good luck! You can have a lot of fun in this field.

Design, Art, or Communications with a minor in something seemingly unrelated but useful at a magazine.
